2 (28 oz) cans whole peeled tomatoes (San Marzano preferred)

1 medium yellow onion, peeled and halved

3 cloves garlic, peeled

4 tablespoons unsalted butter

2 cups vegetable broth (or water)

Salt and black pepper, to taste
Instructions

Sauté aromatics:
In a large pot, melt the butter over medium heat. Add the halved onion and garlic cloves. Cook for about 5 minutes to soften and lightly caramelize. -
Add tomatoes and broth:
Add the tomatoes (with juices) and the broth. Stir and bring to a simmer. -
Simmer:
Reduce heat to low. Cover partially and simmer for 30 minutes to let the flavors come together. -
Blend:
Remove from heat. Use an immersion blender to puree the soup until smooth, or carefully transfer to a blender in batches. -
Season and serve:
Season with salt and pepper to taste. Serve hot with croutons, fresh basil, or a gooey grilled cheese sandwich.
