- 200 g (7 oz) dark chocolate (70% cocoa), chopped
- 100 ml (1/3 cup + 1 tbsp) heavy cream
- 3 tablespoons Amaretto liqueur
- 1 tablespoon unsalted butter, softened
- 1/2 cup (50 g) cocoa powder or finely chopped almonds (for rolling)
Instructions
Prepare the Ganache:
- Heat the cream:
- In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer (do not boil).
- Melt the chocolate:
- Place the chopped chocolate in a heatproof bowl. Pour the hot cream over the chocolate and let it sit for 2 minutes, then gently stir until smooth and fully melted.
- Add the Amaretto and butter:
- Stir in the Amaretto liqueur and softened butter until the mixture is glossy and well combined.
- Chill the ganache:
- Cover the bowl with plastic wrap and refrigerate for 2-3 hours, or until the ganache is firm enough to scoop.
Shape the Truffles:
- Scoop and roll:
- Use a teaspoon or small cookie scoop to portion out the ganache. Roll each portion into a ball with your hands.
- Coat the truffles:
- Roll each truffle in cocoa powder or finely chopped almonds to coat. Place on a parchment-lined tray.
Serve or Store:
- Chill to set:
- Refrigerate the truffles for 15-20 minutes to firm up before serving.
- Store:
- Store in an airtight container in the refrigerator for up to 1 week. Bring to room temperature before serving for the best flavor and texture.

- For a festive twist, roll the truffles in powdered sugar, sprinkles, or crushed amaretti cookies.
- Use high-quality dark chocolate for the best results.
