Description

Rich, decadent, and full of almond flavor, these Amaretto Truffles are an indulgent treat that’s easy to make with just five ingredients. Perfect for gifting or enjoying as a luxurious dessert!

Ingredients

Units Scale
  • 200 g (7 oz) dark chocolate (70% cocoa), chopped
  • 100 ml (1/3 cup + 1 tbsp) heavy cream
  • 3 tablespoons Amaretto liqueur
  • 1 tablespoon unsalted butter, softened
  • 1/2 cup (50 g) cocoa powder or finely chopped almonds (for rolling)

Instructions

Prepare the Ganache:

  1. Heat the cream:
    • In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer (do not boil).
  2. Melt the chocolate:
    • Place the chopped chocolate in a heatproof bowl. Pour the hot cream over the chocolate and let it sit for 2 minutes, then gently stir until smooth and fully melted.
  3. Add the Amaretto and butter:
    • Stir in the Amaretto liqueur and softened butter until the mixture is glossy and well combined.
  4. Chill the ganache:
    • Cover the bowl with plastic wrap and refrigerate for 2-3 hours, or until the ganache is firm enough to scoop.

Shape the Truffles:

  1. Scoop and roll:
    • Use a teaspoon or small cookie scoop to portion out the ganache. Roll each portion into a ball with your hands.
  2. Coat the truffles:
    • Roll each truffle in cocoa powder or finely chopped almonds to coat. Place on a parchment-lined tray.

Serve or Store:

  1. Chill to set:
    • Refrigerate the truffles for 15-20 minutes to firm up before serving.
  2. Store:
    • Store in an airtight container in the refrigerator for up to 1 week. Bring to room temperature before serving for the best flavor and texture.

Notes

  • For a festive twist, roll the truffles in powdered sugar, sprinkles, or crushed amaretti cookies.
  • Use high-quality dark chocolate for the best results.
  • If you prefer a non-alcoholic version, substitute the Amaretto with 1 teaspoon of almond extract and an extra tablespoon of cream.
