    • Attach a candy thermometer to the saucepan and continue to cook, without stirring, until the mixture reaches 235°F (112°C), the “soft-ball” stage.
  3. Add butter and cool:
    • Remove the saucepan from the heat and stir in the butter until melted. Let the mixture cool to about 110°F (43°C). This cooling step is crucial for achieving the perfect texture.
  4. Beat the fudge:
    • Once cooled, beat the mixture vigorously with a wooden spoon until it thickens and loses its glossy appearance. This may take about 5-8 minutes.
